BILTONG TOMATO SOUP

For those cold winter days...try this delicious hearty soup, packed with goodness. This recipe comes with a warning, your family will be asking for it ALL THE TIME......
Ingredients

4 tbsp unsalted butter

2 large yellow onions chopped

3 freshly minced garlic gloves

2 28oz cans of crushed tomatoes

¼ cup chopped fresh basil

1 tbsp sugar
-
½ tbsp Black Pepper or add more to taste

½ cup whipping cream, add more if too acidic

⅓ cup Parmesan cheese
-
2 cups of ready made chicken stock
Directions
Heat butter in a *nonreactive pot - see note below
Add chopped onions and saute over medium heat until softened and golden brown then stir in minced garlic and saute for a further minute. Garlic burns easily so be careful not to burn.
Add the two cans of crushed tomatoes, chicken stock, chopped basil, sugar and black pepper.
Stir together and bring to boil and then reduce heat.
Cover and simmer for 10 minutes.
Transfer mixture into a blender or use immersion blender to blend to a smooth consistency. Please be aware that the soup will be very hot so make sure not to overfill the blender and have hot soup splatter everywhere.
Return blended soup to the pot at reheat over a medium heat.
Add whipping cream and parmesan and bring to simmer.
Ladle the soup into bowls, and top with a handful of beef bru biltong, and garnish with a sprinkling of parmesan and finely chopped basil
Serve with toasted cheese sandwiches and enjoy.
