Introducing our "Protein Powerhouse Salad" featuring biltong slices paired with a vibrant mix of fresh veggies and crisp greens, tossed in a zesty vinaigrette. This is an ideal, healthy summer time meal that can be made in the blink of an eye. Your taste buds will thank you and keep you coming back for more.
Ingredients

85g Classic Savoury Beef Bru Biltong

Arugula, spinach or your favourite mixed greens

Cherry tomatoes, halved

½ cucumber , sliced

1 avocado, sliced
-
Red onion, sliced
-
40oz seedless green or red grapes
-
Corn, sliced right of the cob, uncooked, grilled or charred

Your choice of either feta, goat or crumbled blue cheese

A handful of Pumpkin seeds
-
***Optional*** 1 (15 ounce) can or artichoke hearts, quartered

¼ cup extra-virgin olive oil

½ cup of plain whole milk yogurt

1 bunch of fresh cilantro

20ml freshly squeezed lime juice

½ teaspoon kosher salt
-
1 teaspoon honey or sugar
-
½ jalapeno (with seeds scraped out)

Directions
Toss all salad ingredients together
Make dressing by combining all the ingredients together in a blender on low speed. Add more salt or sweetness to taste
Drizzle desired amount of dressing onto the salad and enjoy
Recipe Note
We love this cilantro salad dressing recipe but if you are not a fan of cilantro you can substitute it with your favourite balsamic vinaigrette.
